Background: The Chopping Block is a butchers and catering business in the rural village of Flecknoe, Warwickshire, run by father Phil Jones and sons Gwil & Ben. The butchers shop was started in 1997 in an old converted cow barn on the farm at Flecknoe, and was set up to supply the local villagers and hostelries as a way of bringing in a bit more money for the farm. Phil was able to draw upon his experience and contacts as a livestock farmer, and buyer for Freedom Foods, to source fantastic quality meat that he was then able to sell on for far less than the high street shops. Pig Roast: However, it was in 2000 whilst at a garden party in Dorset, when he ate a Pig Roast for the first time, that things changed more dramatically. He couldn't believe how fantastic it was, and how well the machine had cooked the pork, or how easy it was to operate. He went straight out the next week and bought his first Pig Roast machine, which he had to import form Australia. Inside 2 years he had 10 on the road. Outside catering: Gwil came to join the business in 2002 to develop the outside catering side, expanding the Pig Roasts as well as starting to provide wedding catering at a local venue; Crockwell Farm near Eydon, where they are still very closely linked with today. As things expanded further, Ben joined in 2004, assisting Gwil and giving them an extra pair of hands to take on new and ever larger projects.
