Beef Madras Recipe

Perfect spice to warm you up on a cold evening | Serves 4 - 6

1.5kg of Diced Beef
1 teaspoon of Paprika
1 teaspoon of cumin
2 tablespoons of madras curry powder
1 teaspoon of chilli powder
1 pinch of cayenne pepper
5g of finely chopped fresh ginger
1 teaspoon of dried ginger
1 teaspoon of dried coriander
2 sliced onions
6 chopped tomatoes
1 tin of coconut milk
Juice of 1 lime
Chopped fresh mint
Chopped fresh coriander
Water
1 pinch of Corn flour (optional)
Mango chutney (optional)
Sunflower oil
Salt and pepper to taste

Method
1. Mix half of the dry ingredients with the beef so that it is covered all over.
2. Fry the other half of the dry ingredients in a deep casserole pan over a medium heat with the sunflower oil until it mixes into a paste.
3. Add diced beef to the pan and start to brown the meat evenly whilst mixing with the seasoning.
4. Now add the sliced onions, the fresh ginger and fry with the other ingredients until they start to colour and soften.
